Minnillo won Miss South Carolina in 1998. From 2003 to 2007, she was a host of ‘MTV Total Request Live. In 2005, she was the New York City correspondent of ‘Entertainment Tonight. Minnillo was Miss Teen USA’s 2004 host and she co-hosted Miss Universe 2007.
She was featured in print advertising and online for the 2007 BONGO Jeans collection after she had left Entertainment Tonight and MTV.
